This Calabrese is made from whole cuts of hand-trimmed pork, crushed red pepper, and bell pepper creating an Italian Southern inspired salami. This salami is ruby red color with a spicy finish. Varieties of this meat are aged at least 21 days. Pairs well with Barolo wine or Irish style cheddar.
