Sweet fennel and fresh garlic to give this rich salame a highly complex aroma. The slow aging process brings out the distinctive mild flavor of the meat. Aged 21 to 51 days depending on size. Coarsely chopped and mixed with flavorings of chile de arbol peppers, fennel and sherry wine. This spicy salame is delicious as a quick snack, in an antipasto or paired with a hard Italian cheese and a glass of Zinfandel.
