Made out of sheep’s  and comprised of bold  spicy flavors the  Caciocavallo  gets its name from the way  in which the cheese is  roped  together  and dangled over a wooden board to drain. The Caciocavallo goes through an extensive creation process that gives it its unique flavor and look. This semi-hard raw cow’s milk cheese is aged for at least 60 days. It is beautiful with a burnished rind. This cheese is mild and milky.
