An accessible, soft-ripened, sheep’s milk cheese covered in a light layer of white mold. There are two distinct layers under the rind. First, a layer of gooey ripe cheese, but as you move towards the center the cheese grows flakier and crumblier. Flavor could be described as slightly acidic with buttermilk and lanolin under notes. This cheese has been aged for 21 days and has a buttery and delicious taste. As this cheese ages the flavors will intensify.
