This Spanish cheese is made from raw sheep’s milk cheese is hand rubbed with iberico lard and finished with rosemary. It has been aged for 8 months in caves and full of flavor. Although it’s been aged for 8 months it is not bitter, it is chew and complex with a long finish that highlights the rosemary.
