This Italian Alps cheese is made with cow’s milk that has been pasteurized. This cheese is hard and has been aged for 4 months. The taste is fruity and rich. Trugole is an Italian cows milk cheese with a semi-soft paste and a salt-water washed rind. After 60 days of maturation, the paste is soft and chewy and the otherwise mild flavor has developed a little bite.
