Garbanzo beans or Chickpeas are sweet and tender legumes. They are composed of a soft, thin shell surrounding a firm and meaty center. Chick peas are sturdy and hold their shape in most dishes, unless of course you’re making hummus. Mature chickpeas can be cooked and eaten cold in salads, cooked in stews, ground into flour, ground and shaped in balls and fried as falafel, made into batter and baked.
